Happiness Is…It’s been a while and I need reminded of Happiness!

It’s been a while since I have linked up with Lisa at Crazy Adventures in Parenting for her weekly #HappinessIS . To be honest life is beyond crazy and just finding a couple minutes to upload pictures to the computer is just not happening for me very often. We are in the process of moving across town this month which means my stress levels are high. So what better time to remind myself of all the Happiness I have right here with my family!

Ranch Chicken Salad

It is supposed to by 106 degrees at my house today so I am avoiding using my oven all month to help keep the house cool. Here is a good recipe that is quick to put together and only requires a little time standing over the stove.
1-Ranch Chicken Salad

Ranch Chicken Noodle Salad

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 1 hour

Yield: 6 servings

Ingredients

  • 4 cups noodles (any noodles will work but my kids like the shell ones)
  • 2 cups cooked chopped chicken
  • 1 cup cooked corn
  • 1 cup cooked peas
  • 1/2 cup shredded carrots
  • 1 1/2 cups Ranch Dressing
  • Salt & Pepper to taste
  • Bacon bits
  • Shredded cheese
  • Diced tomatoes

Instructions

  1. Cook the noodles as directed on package. While they are cooking mix chicken, corn, peas, and carrots in a large bowl, place in fridge.
  2. Once noodles are cooked run cold water over them then strain very well. Add the noodles to the large bowl.
  3. Pour dressing over the noodles, veggies, and chicken. Add salt and pepper then mix well. Place in fridge for 30 minutes then serve chilled with your choice of toppings!

Hawaiian Haystack made in the Crockpot

Hawaiian Haystack Crockpot Style

Prep Time: 5 minutes

Cook Time: PT6-8H

Yield: 8 servings

Ingredients

  • 2 lbs Frozen Chicken Breasts
  • 1 cup Chicken Broth
  • 1 can Cream of Celery Soup
  • 2 cans Cream of Chicken Soup
  • 1 TBS Basil
  • 1 TBS Garlic
  • 1 TBS Pasley
  • 2 cups uncooked rice
  • 4 cups water
  • Optional toppings:
  • Sliced Olives
  • Pineapple
  • Grated Cheese
  • Chow Mien Noodles

Instructions

  1. Place frozen chicken in your crockpot.
  2. Pour chicken broth over your chicken followed by all three cans of soup. Sprinkle with basil, garlic and parsley.
  3. Cook on low for 8 hours or on high for 6 hours (I do stir my chicken around 5 hours so it doesn't get stuck to the side of the crockpot).
  4. Thirty minutes before dinner boil your water on high heat in a saucepan.
  5. Add your uncooked rice.
  6. Turn heat to low, cover and cook (*without stirring) for 15 minutes.
  7. While rice is cooking shred your chicken. (I use my stand mixer for this..see post link below.) Then stir the sauce and chicken well.
  8. To serve put rice on bottom, followed by chicken and sauce, then top with yummy toppings!

Notes

This is a great themed meal! Make a fun night of it by adding some other yummy Hawaiian inspired foods and drinks!

Super Simple Crockpot Baked Potatoes

Crockpot EASY Baked Potatoes

Prep Time: 5 minutes

Cook Time: PT6-8H

Yield: Plan to make at least 1 potato per person.

Ingredients

  • Potatoes (I make 1 1/2 per person)
  • Foil
  • Toppings:
  • Butter
  • Salt & Pepper
  • Cheese
  • Sour Cream
  • Chives
  • Bacon Bits
  • Salsa
  • Beans
  • Chicken
  • Shredded Beef
  • Or any other favorite baked potato topping!

Instructions

  1. Wash the potatoes, poke about 6 times each with a fork and wrap each one in tin foil.
  2. Then place them all in the crockpot to cook on low for 8 hours (or high for 6 hours).
  3. About 10 minutes before dinner turn your crockpot off and remove the potatoes with a pot holder. Serve hot with your favorite toppings.
  4. My family likes to add fun new toppings every time and using some of your leftover meats is a great way to use things you have on hand in the fridge!

Notes

This is a great way to make baked potatoes for a large family or a big crowd. These are perfect served as a side dish or as your main course depending on the occasion!

Easy Crockpot Salsa Chicken

Crockpot Salsa Chicken

Yield: 6 servings

Ingredients

  • 4lbs Chicken Breast (boneless & skinless)
  • 3 cups salsa (Fresh or your favorite variety of salsa!)
  • Additions:
  • Tortillas
  • Sour Cream
  • Cheese
  • Chopped Onions
  • Sliced Black Olives
  • Black or Pinto Beans
  • Spanish Rice

Instructions

  1. Place chicken breasts in the crock pot, then pour the salsa over it.
  2. Cook on low for 8 hours or high for 6 (I put my chicken breasts in frozen and cook all day).
  3. Shred chicken in the crock pot and it's ready to eat!
  4. It is great in a tortilla with your choice of toppings for a yummy chicken taco! Other variations would be to serve over brown rice, in a taco shell or on a tostada shell, or even served in enchiladas. It is a really versatile way to prepare chicken so get creative!

Crock Pot Hearty Beef Stew

Hearty Crock Pot Beef stew

Slow Cooker Beef Stew

Prep Time: 25 minutes

Cook Time: 6 hours

Yield: 12 servings

Ingredients

  • 1 1/2lbs. thawed stewed beef
  • 2 Cups Chopped Carrots
  • 2 Cups Chopped Potatoes
  • 1 Cup Cherry Tomatoes (either whole or sliced in half)
  • 1 Cup Sliced Yellow Squash
  • 1/4 Cup Chopped Green Chili
  • 2 Cups Gluten Free Organic Beef Broth
  • 3 Cups Water
  • 1 Cup Coconut Milk (Original whole found in the fridge section)
  • 4 TBS All Natural Roast Rub (Rancher’s Reserve is the brand I use)
  • 1 TBS Garlic
  • 1 TBS Sea Salt

Instructions

  1. I combined all ingredients except the coconut milk in a 6qt slow cooker and cooked on low for 5 1/2hrs.
  2. 20 minutes before serving add the coconut milk to help thicken the juice a little.
  3. Serve with rolls (great GF/DF option: Udi’s French Rolls found at Whole Foods and Walmart) (Or fresh made Rhode’s dinner rolls).

Notes

This recipe is Gluten Free, Dairy Free and Soy free if you use the ingredients listed above.

Crockpot BBQ Pulled Pork

Crockpot BBQ Pulled Pork

Ingredients

  • 2lbs boneless Pork butt or shoulder
  • 4 cups Rootbeer
  • 2 cups BBQ Sauce of your choice

Instructions

  1. Put pork in the crockpot (my pork is usually frozen). Pour rootbeer over the pork.
  2. Cook for 6 hours on high or 8 hours on low.
  3. Remove the pork and shred. I prefer to shred in my Kitchen aid stand mixer...just throw in and turn on low for a minute or two then you have shredded pork!
  4. Add your barbeque sauce of choice
  5. Serve in fresh baked rolls or tortillas! Great with potato salad, fresh fruit and chips!

Happiness Is_______ (Series: Week 20)
