Café Rio Pork (Allergen Free)

This is adapted from my Aunt Heidi’s Café Rio Pork Burritos to fit our family’s allergies. The first time we ate this was at a huge family reunion. She was easily (and affordably) able to feed a large group with this easy slow cooker meal!

Café Rio Slow Cooker Pork

  • 3lbs pork loin/roast
  • 1 Cup Brown Sugar
  • 2 Cups Club Soda
  • 1 tsp Oregano
  • 1 tsp powdered Ginger
  • 1 tsp Salt
  • 1 tsp Chili Powder
  • 2 cloves Garlic, minced
  • 2 TBS minced Onion
  • 1/2 Cup chopped Cilantro
  • 2 Cup GF Red Enchilada Sauce
  • 2 (8oz) Cans Tomato Sauce

Combine all ingredients, except pork, in your slow cooker. Mix well and add pork. Cook on low 8-10 hours or high 4-6 hours. Shred with Kitchen Aid or by hand with a fork. Serve over rice and top with desired toppings (tomatoes, lettuce, onion, cheese, sour cream, etc.)

Yields: 10 servings
Prep Time: 5 minutes, Slow Cooker Time: 4-10 hours (depending on chosen heat setting & whether pork is thawed or frozen)

Alternatives: You can serve this in tortillas as a burrito if you have no allergies to tortillas.

Ready to start the slow cooker. I cooked this 10lb pork on high for 8 hours because it was so large.
