Chocolate Chip Cookies


My hubby bought me a Kitchen Aide Mixer for Christmas last year. He asked that in return I start baking more. I am not a baker, I love to eat baked goods, but I don’t bake them. So I set out to start teaching myself how to bake. Since then I’ve fell in love with my mixer because it makes baking SO much easier. Needless to say we almost always have a fresh batch of homemade cookies around the house plus I’ve made several different homemade pies and cakes.

I’ve been experimenting with Chocolate Chip Cookie recipes. I’ve like the cookies I’ve been baking but something was a tad off.

Yesterday I ran into Target for a few items and saw they had Ghirardelli Bitter Sweet Chocolate Chips on sale so I picked up a bag. I decided to try the recipe they had listed on the back. I FELL IN LOVE WITH THIS RECIPE!!

My Favorite Chocolate Chip Cookies:

  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (or 2 sticks) butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar, packed
  • 2 tsp vanilla extract
  • 2 eggs
  • 10oz (or a bag of your favorite chocolate chips)

Preheat oven to 375. Stir flour with baking soda and salt; set aside. Beat butter with sugar and brown sugar at medium speed until creamy. Then add vanilla and eggs, one at a time, mixing on low until well blended.

Gradually blend dry mixture into creamed mixture. Stir in chocolate chips. Drop by tablespoon onto ungreased cookie sheets. Bake for 9 to 11 minutes until golden brown.

Now I had a friend share a great tip last year that I now use every time I bake cookies. Between baking batches of cookies place your cookie dough in the freezer. This will help keep the cookies from running and spreading too thin on the cookie sheet. Instead they retain their great shape batch after batch, even when placed on a warm cookie sheet.
